As customers come into Mom’s Place Gluten Free, I sometimes get asked, what’s this all about. I assume those of you who eat Gluten Free do as well. I thought this recent study would be helpful to those of you who want to help others “learn” about why more and more gluten issues are being diagnosed.
Most experts now agree that gluten sensitivity is indeed both real and on the rise. A recent study conducted by Mayo Clinic researchers compared 50-year-old; frozen blood samples of Air Force recruits to recent blood samples and found a significant increase in gluten antibodies, indicators of gluten intolerance. Fifty years ago, only 1 in 700 samples were positive. Now, 1 in 150 show evidence for celiac disease. The prevalence for celiac disease is 3 times greater today than back then.
Although the study was looking at the most extreme form of gluten intolerance, celiac disease, doctors say they see an increase in lower levels of gluten sensitivity as well. The prevalence for a gluten intolerance or gluten allergy is 9 times greater today than 50 years ago—closer to 1 in 70.
It is no doubt that gluten allergies are much more common now than 50 years ago.
The wheat prevalence in our American diet has changed over the past several years. According to clinical nutritionist Sharon Meyer, C.N.C., of Sutter Health’s Institute for Health and Healing at California Pacific Medical Center in San Francisco. American wheat grain has been altered to produce crops that are more robust, drought resistant, or that bake more easily and attractively. (As a point of reference, Monsanto tests over 1,400 crossbreeds of wheat each year. These go through extensive yield, water, etc. tests. These are often launched as seeds to growers.) However, our guts may not have adapted to these changes, nor were any studies conducted on actual people to see how these new grains would actually affect or assimilate in our bodies. At the same time, Americans are eating more wheat & gluten than ever, from that morning muffin to the sandwich at lunch and the pasta for dinner.
According to Dr. David Bilstrum, MD, Functional Medicine at the Bingham Memorial Center for Functional Medicine & International Autoimmune Institute, it’s no longer a question of “if” someone has gluten sensitivity or health issues, it is only a question of “when”. Everyone will be on a scale of 1-99 (1 being the lowest sensitivity; 99 being the highest), yet 80-85% of the population would benefit from eating gluten free as we consume higher quality foods, avoid processed foods, GMO’s, preservatives, etc. It really comes back to, “We are what we eat”, says Dr. Bilstrum.
So how can people know for sure whether or not they’re dealing with this growing problem? Unlike celiac disease, mild to moderate gluten sensitivity may not show up in blood tests, leaving people wondering whether or not they’re gluten sensitive. But some of the signs and symptoms can include gastrointestinal issues (constipation or diarrhea), iron deficiency, weight gain or loss, headaches, decreased memory, muscle/joint pain, muscle weakness, fatigue, diabetes, arthritis, muscle cramps, “wheat belly”, and many more.
