Gluten-Free Fresh Peach Pie

Pie Filling Ingredients

  • 2 1/2 cups sugar
  • 2 cups boiling water
  • 1 cup cold water
  • 3/4 cup cornstarch
  • 1/8 tsp. salt
  • 1 - 3 oz. package gluten free orange jello
  • 1/4 cup lemon juice
  • 6 medium peaches

Cream Cheese Layer Ingredients

  • 1 heaping cup powdered sugar
  • 2 - 8 oz. cream cheese

Directions:

  • Make Mom's Place Gluten Free Blue Ribbon Pie Crust according to directions (using shortening & cold water). It makes two pie crusts - spread pie crusts into two pie pans and bake, according to unfilled crust directions.
  • In a large sauce pan, bring 2 cups water to boil.
  • In medium bowl, make paste of 1 cup cold water, cornstarch, salt and sugar.
  • Add into pan of boiling water and mix well.
  • Cook over medium heat until thick (approximately 3 min).
  • Add jello and stir for 1 minute.
  • Remove from heat and add lemon juice and chill.
  • In mixing bowl, add powdered sugar and cream cheese. Mix with hand mixer until blended and smooth.
  • Spread cream cheese mixture on bottom of each cooled baked pie crusts.
  • Peal and slice peaches and mix with jello mixture. Pour over cream cheese mixture and chill.
  • Enjoy this amazing & yummy goodness with family and friends!

 

Makes enough for 2 pies!
